Our winery is located in the vicinity of our vineyards (at a distance of 13 km) at Evrese in the Gulf of Saros. Both the winery and the wine cellar were constructed using local stones, which naturally regulate the humidity and temperature. This architectural set-up also allows for the wines to be produced in the 'gravitaire' method, without using any pumps. The grapes are carefully hand-picked and selected, then carried in small baskets to the winery. Here, the grapes are separated from the stems and transported into thermo-regulated, stainless tanks. After being macerated and fermented, the wine is settled to rest in French and European oak barrels with a capacity to hold up to 210 litres.
